Crockpot Roast Beef

I grew up in a house where Sunday meals were a big thing. I always loved when the family was together, even after we all had moved out. For most of our marriage, Sunday meals have been hit and miss with the hubs and I. A few months ago, Jimmy’s work started closing on Sundays and it has been great. We started to go to a new church and Sundays are now are family day. We love cooking our Sunday meal together. We are try new recipes, make old recipes and sometimes we just go with an easy meal.

This roast beef I made for Jimmy. He loves roast beef, however I am not a huge fan of it. However I did try this and it was good. Hubs loved it. In fact he asked me to make again soon for him and I will. Maybe he will make it. It us super easy to make. I browned the meat for a little bot on each side. This helps with the tenderness and helps the meat to fall apart, which Jimmy wants. So there you go.

Ingredients

  • 4 lb chuck roast
  • 4 tbsp olive oil
  • 1 lb carrots
  • Garlic salt and pepper to taste
  • ½ cup Worcestershire sauce
  • ½ cup Stubbs beef marinade 
  • 3 sprigs of rosemary

 

Directions

  1. In a skillet, drizzle 2 tbsp olive oil in a pan. Sear chuck roast on each side, add salt and pepper to each side.
  2. In a crockpot drizzle remaining olive oil and place carrots in crockpot. Add salt and pepper to taste. 
  3. Place seared roast on top of carrots. 
  4. Add Worcestershire and Stubbs beef marinade to the crockpot. .
  5. Add rosemary. 
  6. Cook on low 4-6 hours or until done.
4-6 hours 4-6 people

 

Tips & Recommendations

Meat is done when it starts to fall apart. You can substitute beef broth for Stubbs marinade.
