In the last four months I have been really focused on meal planning and prepping. I will tell you something, it has helped me so much. I have been able to cut a few hundreds dollars off our food bill each month. This is huge. I focus on making more homemade snacks and easy ones too. One of their favorite snacks is Chex Mix. Which I love because this will last at least a week or more.

With my Chex Mix I start with melted unsalted butter. I prefer unsalted butter. Each brand of salted butter has a different amount of salt and I prefer if I can control the salt. Next mix in your brown sugar, sugar, cinnamon and salt. Add in your Chex cereal. I love using different kinds of Chex flavors and my kids prefer that too. You can use as many different ones as you want as long as you get 8 cups. I found a Maple flavor Chex that I am loving in these Chex mixes. Mix in your nuts, raisins and apples. I make mine for 45 minutes, making sure to take the pan out of the oven and mix it every 15 minutes. This way you make sure it cooks evenly and the flavor mixes together even more.

This is a great snack to make for so many occasions and it is bound to be hit. Plus it is super easy to make. I don’t know about you, but I am all for easy homemade snacks. Seriously I buy granolas bars, but it takes us forever to go through them. Like I am out of homemade snacks right and 2 of my kids are tracked out, so Lele got a granola bar for her snack. I have making snacks on my things to do list tomorrow.

So grab your kids and make this snack. It will be so much fun and one they can do most of the work for.

Ingredients

  • ½ cup melted butter
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 cups corn chex
  • 2 cups rice Chex
  • 2 cups week Chex
  • 2 cups maple Chex
  • 1 cup walnuts or pecans
  • ½  cup raisins
  • 1 cup dried apple slices

 

Directions

  1. Preheat the oven to 275. Line a a half sheet pan with parchment and set the pan aside.
  2. In a very large bowl, mix together the melted butter, brown sugar, sugar, cinnamon and salt.
  3. Add in 8 cups of Chex mix cereal, walnuts,  cup raisins and apple slices, mix all together.
  4. Spread the mixture onto the prepared pan and bake for 45 minutes. Stir the mixture every 15 minutes. 
Ready in 55 minutes Serves 15-20 people

 

Tips & Recommendations

If you use salted butter, omit the salt if you want.
