Apple Sheet PanPancakes

I love making breakfast whether it’s pancakes, waffles, french toast or even protein shakes. I just love breakfast and love making it, it’s my favorite meal of the day. I know sometimes that you don’t have time to make breakfast or have time to stand there and flip pancakes. Let’s be honest flipping pancakes is a pain in the butt. I can get a little impatient with that. Definitely not as impatient as Cashew. When we make family breakfast and there is bacon, she stands staring at the oven. I guess she thinks it will get done faster?!?!

Back to these pancakes. I wanted something that was Fallish for this week of recipes. (BTW is sheet pan recipes week) So I changed up my everyday sheet pan pancake recipe to apple. I even added some apple cider. Man are these good. Hubs and I love them. They warm up great in the microwave too.

I like making these because they also freeze very well. So we can pull a few out of the freezer for breakfast another day. Top with real maple syrup and boy do you have an easy and perfect Fall breakfast.

Ingredients

  • 2 cups flours
  • ⅓ cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup milk
  • ¾ cup apple cider
  • 4 large eggs
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 cup peeled and chopped apples
  • Cinnamon sugar

 

Directions

  1. Preheat the oven to 350. Spray a jelly roll pan with cooking spray and line with parchment paper.
  2. In a large bowl whisk together flour, brown sugar, baking powder, cinnamon and salt, set aside.
  3. In a separate bowl whisk together milk, apple cider, eggs, melted butter and vanilla extract.
  4. Make a well in the dry ingredients, add the wet mixture. Mix until just combined, few clumps left.
  5. Pour pancake batter into the prepared pan. Spread batter for an even layer.
  6. Add diced apples and sprinkle cinnamon sugar on top. Baked for 16-20 minutes.
Ready in 25 minutes

 

Tips & Recommendations

I used a granny smith apple, but you can use your favorite apple. If you don’t have apple cider, I am sure apple juice will work. You can also use milk instead of apple cider. I would just add a little bit more cinnamon, apple spice or all spice.
