Banana Bundt Cake

Being a mom, I want to make this Mother’s Day menu very special this year. I think Mother’s Day should be super special for your mom. Mom’s do a lot and a lot that goes unnoticed. So this Mother’s Day I want to try and help you make it special for your mom and wife in life.

I make banana bread and or muffins at least once a month. My kids absolutely love it and it makes a perfect snack for the kids. So when I was working on my Mother’s Day menu, I decided to change it up and make a bundt cake. I was thinking a bundt cake would look so pretty on a brunch table or lunch dinner, a beautiful center piece for your table.

This bundt cake is so easy to make and it is sooooooo goooooooood!!! Everyone loved it our family. The kids took it for snack to school and we all had it for snack. Sometimes bundt cakes can be dry, but this one is not dry. It is full of flavor and the brown sugar glaze on top is the perfect topping for this cake. Because I did a glaze on top, I didn’t add extras to the cake like chocolate chips, Nutella or cookie butter.

I know a lot of banana cake and breads say to mash the bananas, but I don’t. I love when there are a little tiny chunks of bananas in the cake. I always add brown sugar to banana bread and cake, it makes everything a little sweeter and softer.

Ingredients

  • 1 cup unsalted butter room temperature
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 4 ripe bananas
  • 3 cups all purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup Greek yogurt
  • Glaze-3 tbsp butter, 2 tbsp milk, ¼ cup brown sugar, 1 tsp vanilla extract, 1 cup powdered sugar

 

Directions

  1. Preheat your oven to 350. Spray a 10” bundt pan with baking spray and set aside.
  2. In a large mixing bowl, cream butter, brown sugar and sugar, until light and fluffy. This should take about 3 minutes.Make sure to scrape down the sides of the bowl.
  3. Add 2 eggs, one at a time, make sure each one is mixed in.  Make sure to scrape down sides of the bowl.
  4. Add in vanilla and mix until combined.
  5. Add in the bananas, mix until combined.
  6. In a separate bowl whisk together flour, baking soda, salt and cinnamon.
  7. Pour half the dry ingredients into the mixing bowl. Mix until almost combined.
  8. Add in the Greek yogurt and mix together.
  9. Add the remaining dry ingredients. 
  10. Pour batter into the prepared pan and bake for 55-60 minutes. 
  11. Let the cake cool for 30 minutes before removing from the pan.
  12. To make the glaze, add the butter, milk and brown sugar to a small saucepan. Whisk until butter is melted and everything is combined. Whisk in the vanilla. Next whisk in the powdered sugar. Whisk for about 2 minutes, making sure everything is combined. Pour over the cake. 
Ready in 1 hour and 45 minutes Serves 12 people
