Bananas Foster Waffles

Our favorite restaurant in Las Vegas makes the most amazing bananas foster waffles and french toast. Every time we go there Jimmy gets the bananas foster waffles and I go back and forth between the two. Lately I have been ordering the waffles, along with one of their mimosas.

Since Mother’s Day is coming I wanted to share my version of it. You can make it with either one of my favorite mimosas.

First make your waffles, I do either mini and regular size waffles. Both ways are delicious. I love to add brown sugar to things and adding a little bit to the waffles gives it such a complimentary flavor with the topping. First mix you dry ingredients together for the waffle. Next mix the wet ingredients together in a separate bowl. In the bowl with the dry ingredients make a well in the center and pour the wet ingredients in it. Mix it together. After you mix the batter together, you want it to sit while the waffle irons heats up. This helps the batter to rise and makes light and fluffy waffles. Light and fluffy waffles are the best.

After the waffles are made, make your topping. This doesn’t take long at all and comes together quickly. Melt the butter. Once the butter is melted whisk in the brown sugar until it starts to bubble. Mix in the cream, cinnamon and salt next. Add in the rum and vanilla, mix for 30 seconds. Mix in the bananas. Now it is ready to serve over waffles.

Ingredients

  • 2 cups all purpose flour
  • 3 tbsp brown sugar
  • 3 tsp baking powder
  • ¼ tsp salt
  • Dash of nutmeg
  • 1 ½ cups milk
  • 2 large eggs room temperature 
  • ½ cup melted brown butter
  • 1 tsp vanilla extract 
  • Bananas Foster Topping-½ cup unsalted butter, ¾ cup dark brown sugar, 1 tbsp vanilla extract, 1 tsp cinnamon, ¾ cup rum,  ¼ cup heavy cream or half and half, dash of salt, 2-3 large bananas sliced

 

Directions

  1. In a large bowl whisk together flour, brown sugar, baking powder, salt and nutmeg, set aside.
  2. In a separate bowl whisk together milk, eggs, melted butter and vanilla extract.
  3. Make a well in the center of the dry ingredients and pour the wet ingredients in. Mix together until just combined.
  4. Set aside.
  5. Preheat waffle iron, according to the manufacturer’s directions.  Lightly grease waffle iron.
  6. Use a ¼ cup and scoop waffle batter onto heated waffle iron.
  7. Cook 4-6 minutes or until edges are lightly browned.
  8. Make the bananas foster topping-In a large skillet, melt the butter. Once the butter has melted, whisk in the brown sugar. Once the brown sugar has melted, whisk in the cream, cinnamon and salt. Add in the rum and vanilla extract whisk together for 30 seconds. 
Ready in 45 minutes Makes 10-12 large waffles
