Chocolate Raspberry Brownies

Christmas time means lots of cooking and baking for a lot of people. In our house it means we are always looking for new recipes and ideas to try. So this year the kids are very involved with meal planning and recipe creating. I am taking the time to teach them things about cooking and baking, even though I am not getting as much done as I would like. But to me it is all about the memories we are making and teaching them life skills.

 

This recipe is inspired by Lele. She was looking for an old recipe book of mine and saw a recipe for chocolate raspberry brownies. She goes mommy can we make raspberry brownies, I said sure that sounds yummy!! So off we went and created a recipe for these brownies!! They are rich and yummy. Lots of chocolate with just the right amount of raspberry. If you use too much jam it will make the brownies soggy.

 

These brownies will be a huge hit for a Christmas party or dessert. It puts a nice twist on brownies!!

Ingredients

  • ¾ cup unsalted butter
  • 6 oz bittersweet chocolate
  • 3 eggs room temperature
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all purpose flour spooned and leveled
  • ½ tsp salt
  • ½ baking powder
  • ½ cup semi sweet or milk chocolate chips
  • ⅔ cup raspberry preserves or jam

 

Directions

  1. Preheat the oven to 350. Line a 9”x9” pan with parchment paper or spray with cooking spray. Set aside.
  2. In a separate bowl whisk together flour, salt and baking powder. Set the bowl aside. 
  3. In a medium saucepan add butter, chocolate  and sugar over low/medium heat. Whisk frequently until the butter and chocolate  is melted. 
  4. Whisk in brown sugar. 
  5. Add eggs and vanilla and whisk until combined.
  6. Add wet ingredient mixture to dry ingredient mixture. Mix until just combined. 
  7. Fold in the chocolate chips.
  8. Pour half of the mixture into the bottom of the prepared pan. Spread the raspberry jam over top. Pour the remaining brownie batter on top of the raspberry jam. Take a knife and swirl the jam and brownie batter to make a marble pattern.
  9. Bake for 30-40 minutes. Use a toothpick to check for doneness. A few crumbs on the toothpick mean it is done. It will cook a little more while cooling on the counter.

Tips & Recommendations

Eggs must be room temperature. If they aren’t room temperature, they will become scrambled eggs in the brownie and that is just gross.
