Easy Shrimp Linguine Dinner

I grew up eating seafood and to this day I am a still huge seafood person. Shrimp is one of my favorite things to eat. So a lot of times while we are on vacation I will order shrimp as least once. On cruises I have been known to order shrimp for every dinner. I probably cook shrimp about twice a month. I usually make it for myself if Jimmy is closing. He is not a shrimp person…I know he is weird, but I love him anyways.

Our theme this week is 10 ingredients or less and this recipe has 10 ingredients. IF (that’s a big IF)you don’t add cheese it is less, but that is just crazy talk. Let’s talk about how easy this meal is to make, it takes about 30 minutes to make. If you cut up the tomatoes in half it will take a little less time. I personally don’t like raw tomatoes and I can’t them. Let’s just I was scared as a kid from tomatoes. Fresh basil is key to the pasta dish. It adds so much more flavor. To me it gives the feeling of eating in a fancy restaurant. After you add the pasta to the sauce, add some of the pasta water to the sauce. Did you know that by adding the pasta water to your pasta dish, it makes it healthier and actually adds a lot of flavor.

I think this is a great meal to make if you are having company over or want to cook a special dinner for your family.

I know you will enjoy this meal as much as I do. A 30 minute meal with 10 ingredients is a win win for me.

Ingredients

  • 2 tbsp olive oil
  • 1 sp minced garlic
  • ⅔  cup white wine
  • 1-2 lbs of grape tomatoes ( I used red and yellow) 
  • Salt and pepper to taste
  • ¼ tsp red pepper
  • Fresh Basil
  • 1 ½ lbs of shrimp peeled and deveined
  • Linguini 
  • Parmesan cheese
  • *See tips for can tomatoes

 

Directions

  1. Preheat a large skillet on low medium heat, add olive oil.
  2. Add about 1-2 lbs of tomatoes to the skillet.
  3. Add salt, pepper, red pepper and garlic to tomatoes, Add ⅓-½  cup of white wine to the skillet, stir occasionally. 
  4. Allow tomatoes to cook down, I like to smash the tomatoes so they cook faster and make more of a sauce, mine took about 20-25 minutes.
  5. Add the fresh basil to the sauce and stir.
  6. Add the shrimp when they sauce is almost ready. The shrimp will take a few minutes to cook on each side. 
  7. Add reming white wine and stir.
  8. While the sauce is cooking, cook the linguini until almost done, like 3 minutes short of cooking time. Make sure to salt the pasta well in the water.
  9. Add the linguini to the sauce. I use tongs to take the linguini and put it into the sauce. Add about a cup of the pasta water to the sauce.
  10. Top with fresh basil and parmesan cheese and serve.
Ready in 30 minutes Serves 4 people

 

Tips & Recommendations

I put a large pot of water on right after I start making the sauce. Make sure not to cook the pasta all the way. It will finish cooking in the sauce I think fresh basil really makes this dish. If you want to sub diced tomatoes you can, the cook time will be less.
