Sausage and Potatoes Sheetpan Dinner

Weeknights during the school year I am all about easy meals. I bet you agree with me. Kids come home from school, have a snack, have some playtime, do a little bit of homework, plus after school activities and before you know it, it is dinner time. I am such a planner but when it comes to meal I am not always the best until recently. I am all about planning meals around our schedule and having some super easy meals on the menu.

My sausage and potatoes is a Fall favorite meal for us. Super easy and it is all made on one sheet pan. So clean up is super easy. I start by cutting the potatoes. The small you cut them, the quicker they cook, which is always a plus. So this meal usually takes me about 30 minutes when I cut the potatoes smaller. Yukon potatoes take a little less time than red bliss or colored potatoes. But I prefer them over Yukon or any white potatoes. Cut the sausages into about 1″ slices. Mix everything with olive oil, salt, pepper and garlic. Bake for 20 minutes. Pull out of the oven and sprinkle the rosemary and parmesan cheese.

Quick and easy meal and so good. Everyone in my family loves this. Pair it with some broccoli or a side salad and you have a great weeknight dinner.

Ingredients

  • 2 lbs of sausage chicken or pork sausage both work great 
  • 2 lbs of red bliss potatoes or potatoes of your choice
  • ¼ cup olive oil
  • Salt, pepper and garlic powder to taste
  • Fresh rosemary
  • ¼ cup grated parmesan cheese

 

Directions

  1. Preheat the oven to 425.  
  2. Line a large sheet pan with parchment paper or aluminum foil.
  3. Slice sausage in ½” slices and place on a prepared tray.
  4. Depending on the size of the potatoes, cut them into quarters or halves and place onto the tray.
  5. Drizzle olive oil over the sausage and potatoes. Use your hands to make sure all of them are covered.
  6. Sprinkle salt, pepper and garlic powder over them.
  7. Place the tray in the oven and bake for 20 minutes. Pull the tray out of the oven and stir the sausage and potatoes. Sprinkle parmesan cheese and rosemary on the sausage and potatoes. Bake for another 10-20 minutes. Bake time will depend on the potatoes.
Ready in 45 minutes Serves 6-8 people

 

Tips & Recommendations

Maybe sure the potatoes are cut small they will cook faster that way. Fresh rosemary is optional.
