Strawberry Banana Bread

I have always loved banana bread. My kids love it too and they have a love for strawberries too. So I decided to make a strawberry banana bread, because I had some bananas and strawberries I needed to use up. So I thought why not make this for the kids? They loved it and it makes a perfect snack for them for school. I love making homemade snack for them, especially ones that have some fruit in them.

I also love cookie butter and it pairs so well with strawberries. Who would have thought? But the combination of strawberries and cookie butter is amazing and it gives this bread so much flavor. Have your tried cookie butter nor Biscoff butter? You can cookie butter at Trader Joes and Biscoff at your local grocery store or even Target.

This type of bread is considered a quick bread and they are my favorite types of bread to make. They don’t need yeast to make them and they don’t take nearly as much time as yeast breads to make. Did I mention that it is moist?  This is not a bread that is dry, which is a good thing. It also comes together easily too. You can cheat and just mix the dry ingredients in the bowl, which I do sometimes. It saves a dish and a minute or two in time.

Ingredients

  • ½ cup unsalted butter room temperature 
  • ½ cup sugar
  • ⅓ cup brown sugar
  • 2 large eggs room temperature
  • 2 tsp Watkins vanilla extract 
  • 2 large bananas
  • ½ Greek yogurt
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup diced strawberries with 1 tbsp of flour
  • ½ cup cookie butter

 

Directions

  1. Preheat the oven to 350. Line a 9”x5” bread with parchment paper and spray with baking spray. Set the pan aside.
  2. In a large mixing bowl cream together the butter, sugar and brown sugar, until light and fluffy. About 3 minutes.
  3. Mix in the eggs until incorporated.
  4. Mix in vanilla.
  5. Mix in Greek yogurt, mixture will look curdle, but it is okay.
  6. Add in dry ingredients, making sure to mix until combined.
  7. Fold in diced strawberries. 
  8. Swirl cookie butter through the batter.
  9. Pour batter into the prepared pan. Bake for 50-60 minutes, mine took 55 minutes to bake.
Ready in 75 minutes Serves 10-12

 

Tips & Recommendations

You can omit the cookie butter, but the cookie butter is amazing with strawberries and bananas.
