Strawberry Snack Cake

The kids have been tracked out , so lots of baking has been happening before and after vacation. In case you don’t know what track out, it means our kids go to year round school. They go to school for 9 weeks, off for 3-4 weeks. So they are in the middle of their last track out for the school year. One day I bake with each of the kids. JJ wanted to bake cupcakes or cake, we finally decided on a snack cake. And I will say he picked a winner to make.

First this cake is really perfect for so many things. Whether it is a summer BBQ, Mother’s Day or you just want something fun in the house for dessert or snack, this cake is just perfect. It is light and sweet, thanks to adding some white chocolate chips. The cake isn’t dense, it is light. The texture to me is just perfect. It is moist and has flavor in every bite. I made it in a 10″ springform pan, but you can use an 9″ pan if you want. It will take a little longer to bake. You can use a square pan.

JJ had some thoughts for this cake, he wanted some type of chocolate. So he decided to add some white chocolate chips. I think this was a great choice, because it didn’t make the cake overly sweet, it added just the right amount of sweetness to the cake. Creaming the butter and sugar at the beginning of this recipe, it really helps the cake to be on the lighter side.

Ingredients

  • ½ cup butter room temperature
  • 1 cup sugar 
  • 2 large eggs room temperature 
  • 2 tsp vanilla extract 
  • 1 ½  cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup Greek yogurt
  • ½ cup room temperature milk
  • 1-1 ½ cups fresh strawberries sliced
  • ½ cup white chocolate chips optional 
  • ¼ cup sugar to spring on top of the cake

 

Directions

  1. Preheat the oven to 350. Spray a 10” springform pan with baking spray and set aside.
  2. In a small bowl whisk together the Greek yogurt and milk, set aside. 
  3. In a medium bowl whisk together the flour, baking powder and salt, set aside. 
  4. In a large mixing bowl, cream butter and sugar until light and fluffy, about 4 minutes.
  5. Add in eggs, making sure each one is incorporated. 
  6. Mix in vanilla extract. 
  7. Add in half of the dry ingredients, mix until almost combined.
  8. Add in the wet ingredients, mix until combined,
  9. Add in remaining dry ingredients. 
  10. Add in strawberries and white chocolate chips. 
  11. Sprinkle ¼ cup of sugar on top.
  12. Pour batter into the prepared pan.
  13. Bake for 35 minutes. 
Ready in 45 minutes Serves 10-12 peple

 

Tips & Recommendations

You can omit the white chocolate chip and add 1 ½ cup of strawberries. You can skip the sugar on top or a little less than ¼ cup.
