Christmas Crack

Today is the final day of 12 Days of Christmas Cookies. This is definitely a customer favorite and so easy to make. I make this every year for Christmas cookie boxes and everyone always tells me you just can’t eat one.

 

Ingredients

  • 1 sleeve of saltine crackers (40ish)
  • 1 cup unsalted butter
  • 1 cup dark brown sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2-3 cups Ghirardelli chocolate chips

 

Directions

  1. Preheat oven to 350
  2. Spray a jelly roll pan (11×17) with Pam and line with parchment paper
  3. Make rows of crackers to cover the pan, you might have extra room
  4. In a medium pot whisk butter and brown sugar on medium heat until it starts to boil. Let it boil for 3 minutes and add vanilla and salt to it and whisk for about 30 seconds
  5. Pour mixture over the crackers
  6. Baked for 7 minutes
  7. Pull the tray out of the oven and immediately sprinkle chocolate chips evenly and bake for another minute
  8. With an offset spatula spread the chocolate chips to make sure they are spread evenly
  9. Sprinkle with jimmies
  10. Refrigerate for at least two hours before breaking into pieces and serving

Crack will stay fresh for 10 days in an airtight container or can be frozen for two months
