Peppermint Brownies

Ingredients
Brownies
- ½ cup unsalted butter melted and cooled
- ¼ cup canola oil
- 1 ⅓ cup sugar
- 2 large eggs room temperature
- 2 tsp vanilla extract
- ½ tsp peppermint extract
- ½ cup all purpose flour
- ½ cup cocoa
- ½ tsp baking powder
- ½ tsp salt
- 1 cup chocolate chips
White chocolate topping
- ⅓ cup heavy cream
- 1 cup white chocolate chips
- Peppermint candies
Directions
- Preheat oven 350. Spray with Pam a 9×9 square and line with parchment paper.
- In a medium bowl whisk melted butter, oil and sugar.
- Add eggs, vanilla and peppermint extract
- Whisk flour, baking powder and salt into butter mixture until combined
- Fold in chocolate chips
- Pour into pan, bake 23-25 minutes or until done
- While brownies are cooling, make white chocolate ganache.
- In a microwave safe bowl warm up the heavy cream for about 30-40 seconds until it starts to bubble
- In a small bowl pour the warm heavy cream over the white chocolate chips, let sit for a minute and whisk together. Let cool for 10 minutes
- Pour the white chocolate ganache over the peppermint brownies, using an offset spatula to smooth the ganache
- Sprinkle with peppermint Ghirardelli or candy canes
