Chocolate Peanut Butter Blossoms
The other day on a walk I was thinking about recipes I wanted to make and share with you. One of my favorite combos in general is chocolate and peanut butter. Peanut butter blossoms are always a favorite at Christmas time for people to bake. However for some reason, they aren’t baked throughout the year. Please tell me why this is?!?!?! So I decided to change up the traditional peanut butter blossom, and turn the cookie into a chocolate peanut butter blossom with a peanut butter cup on top. The cookie has a great chocolate flavor with a hint of peanut butter, topped with a peanut butter cup and you will be in love instantly. Not only is this cookie perfect for Valentine’s Day, but will be a favorite throughout the year. Hubs and I had fun taste testing this recipe. Usually we only eat one cookie from a new recipe, but this one we might have eaten a few each. What can I say this cookie is a new favorite for us.

Ingredients
- 1 cup Jif peanut butter
- ½ cup unsalted butter
- ¾ cup sugar
- ½ cup dark brown sugar
- 1 ½ tsp vanilla extract
- 2 large eggs room temperature
- 1 ½ cups all purpose flour
- ½ cup black cocoa powder (or dark)
- 1 tsp salt
- 1 tsp baking soda
Directions
- Preheat the oven to 350.
- Line 2 trays with parchment paper and set aside.
- In a medium bowl, whisk together flour, cocoa powder, salt and baking soda, set aside.
- In a large mixing bowl, cream the peanut butter, butter, sugar and brown sugar until light and fluffy, about 3 minutes.
- Add the eggs and vanilla extract, mix until well combined.
- Slowly add the dry ingredients to the mixing bowl and mix until combined, make sure to scrape down the sides of the bowl.
- Using a small cookie scoop, scoop the dough on the prepared baking sheets. Roll each ball of cookie dough into your favorite sprinkles. I use these sprinkles https://shopsweetsandtreats.com/sprinkles-mix-cupid-s-arrow
- Bake for 10 minutes or until done.
- While the cookies are baking, unwrapped the peanut butter cups.
- Let the cookies cool for 1 minute before placing the peanut butter cup on top of each cookie. I prefer the peanut butter melting a little bit on the cookie.
