Sweet Potato Fries

Let’s just say Jimmy and I love french fries. We might even judge restaurants by their fries, because if they have good fries, their food usually is delicious. So with trying to be healthier and offering healthier options, I decided to work on sweet potato fries recipe. So here is one of my favorite sweet potato fries recipe!!

Ingredients
- 4 small to medium size sweet potatoes
- 3 tbsp olive oil or oil of your choice
- 3 tbsp cornstarch
- ¾ tsp garlic salt
- ½ tsp pepper
- ¼-½ tsp paprika
- Additional salt to taste
- ¼ cup parmesan cheese
Directions
- Slice sweet potatoes in ¼’-½” slices. Depending on the size of your sweet potatoes will depend if you want to cut the sweet potato in half. I do not peel the potatoes, but if you want to you can
- Soak the potatoes in water for 30-45 minutes, place potatoes on paper towels or clean towel to dry
- Preheat the oven to 400 and line a tray with sides with parchment paper
- While the potatoes are drying, mix the corn starch, garlic salt, pepper and paprika, set aside.
- In a bowl, mix the olive oil and sweet potatoes, making sure to coat the potatoes well.
- Add the dry ingredients to the sweet potatoes and mix coating fries.
- Place fries on tray making sure to spread out as best as you can.
- Bake for 15 minutes, then flip and bake for another 15 minutes or until done to your liking.
- Sprinkles with parmesan cheese as soon as they come out of the oven.
