Key Lime Pie Bars
Key Lime Pie is one of my favorite desserts ever. Every time we go on a cruise, I order Key Lime Pie one night for desserts and it’s so good. As much as I am chocolate girl at heart, there’s just something about Key Lime Pie that I love. So after one of our cruises I can home determined to make a Key Lime Pie dessert. I really miss cruising!! We can’t wait to go on another cruise! Anyways I decided to make Key Lime Pie bars. They really make a great dessert and so much easier to serve than pie. This recipe doesn’t require a mixer, just a bowl, whisk and and some arm muscle. I know you will love this recipe!!

Ingredients
- 1 8.8 package of Biscoff Cookies (or graham crackers)
- ½ cup butter melted
- ⅔ cup brown sugar
- 2 14oz cans of sweetened condensed milk
- Zest from 3 limes
- ¾ cup key lime juice
- ⅔ cup Daisy sour cream or greek yogurt
Directions
- Preheat the oven to 350 degrees.
- Spray with cooking spray and line a 9×9 square cake with parchment paper, set aside.
- Make the crust-while the butter is melting, smash or use a blender/food processor to make crumbs with the cookies. Whisk together the crumbs and brown sugar, pour in melted butter and mix together. Lightly press the crumb mixture into the bottom of the prepared pan. Bake for 10 minutes. Cool for 10 minutes.
- While the crust is cooling, make the filling. Whisk together the condensed milk, lime zest, key lime juice and sour cream.
- Baked for 15 minutes.
- Let cool for an hour before placing in the fridge for at least an hour.
Tips & Recommendations
If you can find key lime, you can use regular limes. You can find key lime juice in your grocery store, I use the key west lime juice. You can substitute graham crackers for the biscoff cookies.
