Corn Salsa
Grilled corn is one of my favorite things to eat in the summer. Something about that little bit of charred flavor just makes it better. When we make corn on the cob any kind, we actually make extra to be able to freeze some. Instead of freezing the leftovers this time, I decided to make some corn salsa!! Man was it good. It is perfect for tacos, grilled or salmon or even just with chips. I personally like it better than regular salsa. What is your favorite way to eat corn salsa?

Ingredients
- 2 cups of corn from corn on the cob
- ½ red onion diced
- 1 red pepper diced
- Handful of chopped cilantro
- ½ tsp garlic powder
- ¼ tsp chili lime seasoning
- Salt and pepper to taste
- Juice from 2 limes
Directions
- Dice onion and pepper, set aside.
- Roughly chop a handful of cilantro, set aside.
- In a large bowl mix corn, onion, red pepper, cilantro, garlic powder, chili lime seasoning, salt and pepper. Squeeze in lime juice.
- Let sit for 30 minutes before serving.
- Will stay fresh in an airtight container for 6 days.
Tips & Recommendations
If you don’t have time for it sit, that is okay. Letting sit increases the flavor of it the salsa. If you don’t have chili lime seasoning, you can use a little bit of lime zest, paprika, cayenne pepper and cumin. But honestly, why haven’t you gotten the chili lime seasoning yet?
