Parmesan Truffle Fries

Jimmy and I are definitely french fry snobs, cause we love french fries. We are very picky about them. To the point if a restaurant doesn’t have good fries, we won’t go there. We have a few restaurants that we just love their fries. There is a place in Estes Park, that has the best Parmesan Truffle Fries. They are so good, that I was determined to make some better. I personally like my homemade fries just as much as the ones from Estes Park. One thing that I love about my fries is that they baked, not fried. A little secret, I do not know how to fry food. Which isn’t a bad thing. Frying food is so messy to me So I have learned ways to bake and mae amazing things instead of frying foods.

Ingredients

  • 2 large Russet Potatoes
  • 1 tbsp olive oil
  • 1 tbsp cornstarch 
  • 1 tsp garlic powder
  • ¼ tsp paprika
  • Sea salt and pepper to taste
  • ¼ cup grated parmesan cheese
  • 2 tbsp of truffle oil
  • Additional parmesan cheese
  • Parsley  optional

 

Directions

  1. Clean and cut potatoes into about ¼ inch restaurant style fries. Soak in cold water for 30 minutes. 
  2. While the fries are soaking, preheat the oven to 400. Line a baking sheet with parchment or tin foil paper. Lightly grease the parchment paper or tin foil. Set aside.
  3. Drain water from fries.
  4. In a large bowl mix together hand cut fries, olive oil, cornstarch, garlic powder, paprika, salt and pepper.
  5. Place fries on a prepared baking sheet and bake for 20 minutes.
  6. Take the fries out of the oven and flip all the fries. Add parmesan cheese to the top of the fries. Bake for another 15 minutes or until done. We like our fries crispy. 
  7. When fries are done, drizzle with truffle oil. Add more parmesan cheese and fresh parsley if desired.

 

Tips & Recommendations

You can easily double this recipe. I also like to add some parmesan during baking and more at the end. By soaking the fries in cold water, it helps the fries to bake crispy.
