BBQ Chicken Roll
One thing I am known for is my pepperoni bread. I have been asked to make some other recipes that were similar to this bread. So I decided to make s BBQ Chicken Roll. First of all I will say I am not a huge BBQ person. Like I can do without it, however the hubs loves it. So I made this roll for him. I tried this BBQ sauce Rufus, which is amazing. I was shocked about much I liked it. I am actually in the process of making other BBQ recipes with this sauce. I used leftover BBQ chicken. I don’t know about you, but I am all about repurposing leftovers into different meals. So this meal is a great repurposed meal for BBQ chicken.
I use Tillamook cheese. If you haven’t tried Tillamook yet, I highly recommend it. It is a creamer and such a flavorful cheese. Also if you buy the grated cheese, they are thicker, which I love.

Ingredients
- 1 loaf of frozen Rhodes bread
- ½ lb of shredded bbq chicken
- ⅓ cup Rufus bbq sauce
- 1 ½ cups Tillamook grated cheddar cheese
- 1 pepper diced
- Chopped cilantro
Directions
- Take bread out of the freezer to let rise. Will take about 5-6 hours.
- Preheat the oven to 350.
- Lightly flour your surface and roll bread out into an oval shape. I usually roll mine about 15”x20” give or take. Make sure not to roll it too thin.
- Spread bbq sauce onto roll out bread.
- Spread shredded chicken onto bread.
- Sprinkle peppers onto bread.
- Sprinkle cheese and cilantro on top.
- Carefully roll bread and place on baking sheet. Bake for 35 minutes or until done. A few minutes before it is done, spread butter on top of bread for a nice shine.
- Let cool for a five minutes or so before slicing and serving.
Tips & Recommendations
Don’t roll the dough too thin. It needs to be able to hold the chicken and cheese. Make sure to shred the chicken, dice chicken won’t work. The first time I made this, I did diced chicken. It was too heavy. You can substitute parsley for cilantro.
