Apple Cider Donuts

As we keep off our apple theme week, I had to start the week with what I like to call my famous APPLE CIDER DONUTS!! You might be wondering why I call them famous. Well before I closed my business down, I was know for Apple Cider Donuts. In fact I was like the first bakery to make them. I can’t even tell you how many apple cider donuts I have made. They were by far my most popular flavor of donuts and items over all. In fact I still have people trying to order them from me.

When I started my bakery about over 6 years ago. apple cider donuts were one of the first donuts things I wanted to conquer. We had two local farmers that had amazing apple cider donuts and I always remember getting them. My mom also made a donut which we called the Halloweenie donut. Unfortunately none of us have the recipe, which made the apple cider donut recipe even more important. Every time I make these donuts, I think of my mom.

You will notice that these donuts are baked, not fried. So that is a huge win to me. Well also because I don’t know how to fry food. You need a donut pan, I suggest two pans or 12 cavity donut pan.  I prefer the metal ones over the rubber ones out there.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

It is important to reduce the apple cider. I love to add some cinnamon, all spice or nutmeg to the cider while it’s reducing. This helps the flavor of the cider so much.

Ingredients

  • 1 cup apple cider reduced to a ½ cup
  • 2 cup all purpose flour
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 tsp allspice or apple pie spice 
  • ½ cup buttermilk room temperature
  • 1 large egg room temperature
  • 1 ½ tsp vanilla extract
  • 3 tbsp melted unsalted butter
  • Topping ¾ cup melted brown butter 1 ½ cup sugar, 1 tbsp of cinnamon

 

Directions

  1. Preheat the oven to 350.
  2. Reduce apple cider.
  3. In a large bowl whisk together flour, sugar, brown sugar, baking powder, salt, baking soda, cinnamon and allspice. Set aside
  4. In a separate bowl whisk together buttermilk, cider, egg and vanilla extract. Add melted butter whisk until combined.
  5. Pour wet mixture into dry ingredients. Using a spatula mix together  until combined.
  6. Fill each donut cavity about ⅔ -¾ full.
  7. Bake for 9 minutes. Mine always takes 9 minutes.
  8. Make the topping. I brown my butter, but you can just melt it. Make the cinnamon sugar.. Deep each donut into the butter and dip into the cinnamon sugar.
Ready in 25 minutes Makes 16-18 donuts

 

Tips & Recommendations

I love to add some cinnamon and nutmeg to the apple cider as it is reducing. I use a piping bag to pipe the batter into the donut cavity. You can use a freeze bag and snip the bottom corn off if it or spoon the batter into the donut cavity. I prefer to brown my butter but you can just melt it.
