Apple Balsamic Chicken Salad
There is a restaurant by us that makes the best salads, well actually all their food is amazing. This salad is definitely inspired by them. One of my sisters always calls this restaurant the good salad place. I love making this salad at home and it is a perfect week night meal for us. This salad is a great salad for the Fall, well really anytime. I just tend to make it more in the Fall, when apples are in season.
Over a year ago, when I went to visit my sister she took me to this place that has amazing balsamic. Ever since then, I have been hooked on good balsamic and I am always looking for good ones. I usually buy the smaller bottles first, that way I can see what I really like and use a lot. I love adding a good quality balsamic to salads. I think when you do, you really don’t need salad dressing. I love using their apple balsamic or their maple balsamic on this salad.
You can make the marinate in the morning, let you chicken marinate all day if you want. It just needs to marinate at least an hour. You really want the marinate to soak into the chicken.

Ingredients
- 4 small to medium boneless chicken breast
- ½ cup balsamic vinegar
- ⅓ cup olive oil
- 3 tbsp maple syrup
- 1 tsp minced garlic
- Salt and pepper to taste
- Salad
- 2 medium apples (honeycrisp or granny smith apples)
- Chopped carrots
- ¼ cup chopped pecans
- ¼ cup dried cranberries
- Blue cheese
- Additional balsamic for salad
Directions
- In a bowl whisk together balsamic vinegar, olive oil, maple syrup, garlic, salt and pepper. Place chicken in marinate. Cover and refrigerate for 1 hour or longer.
- Preheat the oven to 400. Place chicken and marinate in a dish and cook for 30 minutes or until chicken is done. This will really depend on the size and thickness of the chicken.
- While the chicken is cooking, get your salads ready. Place salad in bowls. Add sliced apples, pecans, cranberries and blue cheese to salad.
- When chicken is done, add to salad.
- Drizzle a good quality balsamic on the salad. Serve with your favorite salad dressing, if desired.

A good balsamic is required for this salad. It helps intensive the flavor. By adding it to the salad, it adds so much flavor, which requires little to no salad dressing than.
