Sheet Pan Berry Pancakes
I probably cook breakfast 2-3 times a week, so I am always looking for new ideas. Especially ones that are easy to make. I make a lot of sheet pan pancakes, but I haven’t shared many of those recipes with you. So I thought with Easter around the corner and strawberries in season, I would share my Sheet Pan Berry Pancake recipe with you.
These pancakes are to die for!! My kids love them. They also love that it makes a lot and they usually get some leftovers, which they love for school morning breakfasts. You can really add any berries you want, we usually stick with strawberries and or blueberries.
Using room temperature ingredients are key to making these pancakes light and fluffy. I don’t know about you, but I love light and fluffy pancakes. I think that is the only way to go. I mix all the dry ingredients in a bowl and the wet ingredients in a separate bowl, except for the butter. Make a well in the center of the dry ingredients and pour the wet ingredients in well and mix together. It is okay if there are some lumps. Next mix in the melted butter. Pour the batter into the prepared pan. Sprinkles the berries on top and let it bake away.
If you haven’t tried sheet pan pancakes, I highly encourage you to. You will thank me, they making homemade breakfast and brunch so much easier. What is important is the eating together and spending time together.

Ingredients
- 3 cups buttermilk room temperature
- 2 large eggs room temperature
- 1 tbsp vanilla extract
- 3 ½ cups all purpose flour
- ⅓ cup brown sugar
- 2 tbsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 6 tbsp melted butter
Directions
- Preheat the oven to 400. Line a baking sheet with sides with parchment paper. Mine pan is 12″x18″.
- In a large mixing bowl, mix together the buttermilk, eggs and vanilla.
- In a separate bowl whisk together flour, brown sugar, baking powder, cinnamon and salt.
- Make a well in the center of the dry ingredients and pour the wet ingredients in and mix together. It is okay to have some lumps of flour left.
- Mix in melted butter.
- Pour batter into the prepared pan. Sprinkle with strawberries and blueberries.
- Bake for 15 minutes.
- Sprinkle with powdered sugar and serve.
