Strawberry-Lemonade

I read a Nicholas Spark book last weekend and parts of a Summer Hallmark movie. Besides being a love story, you know what they both have in common? They drank lemonade on summer days. So I thought I better share my strawberry lemonade recipe with you. My kids love all things lemon, especially lemonade. They love to get lemonade from our farmers market or if we go out to eat. So I decided I should make them some.

With strawberries still in season, it is the perfect time to make some strawberry lemonade. First you start with a simple syrup. I do one cup water 3/4 cups of sugar. If you want it sweeter add a full cup. Once your sugar is dissolved turn the simple syrup down to low. You need to make make your strawberry puree. Once that is made pour your strawberry puree through a sieve into the simple syrup. Turn the heat up to medium and stir for 1-2 minutes, until everything is mixed. Remove from the stove and let it cool for 10 or minutes. While it is cooling squeeze your lemons into a pitcher. (See notes for squeezing lemons) Pour the strawberry simple syrup into the lemon juice and stir. Add your water and ice and mix all together.

See isn’t that pretty easy to make? Homemade lemonade really shows some kindness and love to family and friends.

Ingredients

  • Simple Syrup-1 cup of water and ¾ cups sugar
  • 2 cups of strawberries clean, hulled and chopped
  • 1 ½ cups freshly squeezed lemon juice
  • 4 ½ cups water
  • Ice

 

Directions

  1. In a medium saucepan add water and sugar. Heat on medium heat, bring to a simmer and stir until sugar is dissolved.  Turn down to low heat.
  2. Add strawberries  and ⅓ cup of water to the blender and blend  until combined.
  3. Pour strawberry juice through a sieve into the simple syrup. Stir for about 1-2 minutes.  Let cool for about 10 minutes. 
  4. While the strawberry simple syrup is cooling, squeeze the lemons for the lemon juice. 
  5. In a large pitcher pour the lemon juice, strawberry simple and water into a large pitcher.  Stir together.
  6. Add the ice and stir again. 
  7. Pour over ice and serve. 
Ready in 20 minutes Serves 4-6 people

 

Tips & Recommendations

Make sure to use fresh lemon juice. If you want it a little sweeter, add 1 cup of sugar to the simple syrup, instead of ¾ cup sugar. If lemons are hard place each lemon in the microwave for about 20 seconds, this helps to make them soft and will allow you to get more juices out. Also room temperature lemons work best.
