Bacon Chocolate Chip Cookies
Is there such a thing as too many chocolate chip cookie recipes? I don’t believe there is and I hope you agree with me. Right now I have 8-10 chocolate chip cookie recipes. I am sharing another one with you now. And I have another one in the works too. Jimmy and the kids love chocolate chip cookies, so I am always making some version of them.
I have made different versions of bacon items, like my maple bacon maple cupcakes or my maple bacon donuts. Sometimes I do a chocolate base and sometimes a vanilla base. Both are delicious. These recipes gave me the idea for a cookie recipe with bacon.
Let’s talk about steps in making these cookies. First we aren’t browning the butter, I know you are shocked. For these cookies I wanted to simplify the dough recipe, since we are using bacon. You can cook your bacon however you want, but I chose to cook it the day before making this in my air fryer. You want the bacon to be crispy. In the tip section I will link the air fryer, that I love. Air fryers are a hit and miss.
Cream the butter until light and fluffy. You want the butter to be light and fluffy and making sure the brown sugar is mixed in. You want that nice cream. I always add vanilla to my cookie recipes. Vanilla just makes the world a better place. We add some corn starch to the flour mixture. This is a key to a very nice soft chewy cookie. The bacon and chocolate chips had such a nice flavor to the cookie and the texture is just perfect.

Ingredients
- 1 cup unsalted butter
- 1 cup brown sugar
- ⅓ cup sugar
- 2 large eggs room temperature
- 2 tsp vanilla extract
- 2 ⅓ cups all purpose flour
- 2 tsp cornstarch
- ¾ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ⅓ cup chopped cooked bacon
- 1 ⅓ cups chocolate chips
Directions
- Preheat the oven to 350. Line 2 cookie trays with parchment paper and set them aside.
- In a large mixing bowl, cream butter until light and fluffy, about 3 minutes
- Add brown sugar and sugar, cream for 2-3 minutes until light and fluffy.
- Add eggs one at a time, making sure each one is mixed in well.
- Add in vanilla, mix until combined
- In a separate bowl whisk together flour, cornstarch, baking soda, baking powder and salt.
- Slowly add the dry ingredient to the butter mixture, mix until few traces of flour are left.
- Add the chocolate chips and chopped bacon.
- Using a medium cookie scoop, scoop batter onto the prepared cookie sheets. Making sure to space 2” apart. Baking for 12 minutes or until done.
- Cookies will stay fresh for 5 days.
Tips & Recommendations
Ghirardelli Chocolate Chips are my favorite to use. We love the Trader Joes bacon.
Make sure the bacon is crispy, it holds up in the cookie better. This is the air fryer we love.
