Easy Corn Salad
Summer is all about lighter food and easy meals. This grilled corn salad is a favorite of mine to serve. So those nights that it is hot and you want a simple meal, it is a hearty and filling salad. This is a perfect side for you to make to go with your protein. Seriously we have it with steak or ribs or salmon. It is one of our favorite meals. My kids absolutely love this salad.
I always use leftover corn for salad. It is usually grilled corn, but sometimes I might use a couple ears of cooked corn. But I love the taste of the grilled corn in it. Red and orange peppers add a beautiful color to the salad. Cucumbers had a little bit of green color to the salad. You can use one cheese, but we like the feta and the little mozzarella balls in it. The seasoning is to taste, so add for your taste.

Ingredients
- 10-12 ears of grilled or cooked corn
- 2 peppers, red and orange diced
- 1 cup diced english cucumbers diced
- ½ cup feta cheese
- ½ cup small fresh mozzarella balls
- Small cherry tomatoes optional
- ½ red onion diced optional
- 3 tbsp olive oil
- 3 tbsp champagne or light flavor vinegar
- Salt, pepper, garlic powder and onion salt to taste
Directions
- Cut corn off the cob and add to a large bowl.
- Add in diced peppers, cucumbers, feta cheese and fresh mozzarella cheese. Mix together. (Add in tomatoes and onion if adding)
- Add in olive oil and vinegar, mix all together,
- Add salt, pepper, garlic powder and onion salt. Mix all together.
- Let sit for 15 minutes before serving, this helps all the flavors to mix together.
