Pumpkin Oatmeal
My mom made breakfast for us all the time growing up. Oatmeal was one of my favorite things she made. All different kinds and even made her own instant oatmeal. I love that I get to make my kids breakfasts and they love their homemade breakfast.
With fall coming, I wanted to do a fall flavor. Something besides apple and cinnamon and maple and brown sugar, because they are my favorite flavors of oatmeal. I went with pumpkin oatmeal and it was a huge hit. The kids wanted seconds and wanted me to make it again the next day. They said it was the best oatmeal ever. So I know this will be on repeat this fall season.
When making homemade oatmeal, do not use quick oats. You want to use rolled oats. They cook so much better and do not get soggy. I do a mixture of milk and water, but you can do all water or all milk, even almond milk. After the oats come to a simmer, you want to add the remaining ingredients. Make sure to stir and mix it all together. You just need to cook it for another 6 minutes.
When you serve it, just drizzle a maple syrup on it and sprinkle a little bit of cinnamon sugar on the oatmeal. This adds a nice touch, but you don’t have to do these.

Ingredients
- 1 cup Old Fashioned Rolled oats
- 1 cups milk
- ½ cup water
- ⅓ pumpkin puree
- ¼ cup brown sugar
- 1 tsp vanilla extract optional
- ½ tsp pumpkin spice
- ¼ tsp cinnamon
- Dash of salt
- Maple syrup and cinnamon optional
Directions
- In a medium saucepan pan add water, milk and oats. Bring to a slow simmer.
- Add pumpkin, brown sugar, vanilla, pumpkin spice, cinnamon and salt, mix together. Stir occasionally for the next 6-8 minutes.
- Serve with a drizzle of maple syrup and enjoy.
