Almond Meltaways

Today is day 11 of 12 Days of Christmas Cookies. These almond meltaways are another one of my hubby’s favorite cookies and mine too. I love how soft and light they are. Plus almond extract is one of my favorite flavors and they have sprinkles. So really how can you go wrong with this cookie? And the dough doesn’t have to be refrigerated, which is always a plus.

Ingredients
Cookies
- 1 cup unsalted butter room temperature
- 1 cup sugar
- 1 tsp almond extract
- ½ tsp vanilla extract
- 1large egg room temperature
- 2 cups flour
- ½ tsp baking powder
- ½ Tsp salt
Almond Glaze
- 1 ½ cups powdered sugar sifted
- 1 ½ tbsp water or milk
- 1 ½ tsp almond extract
- Sprinkles
Directions
- Preheat oven to 350
- Lone cookie sheets with parchment paper, set aside
- Cream butter and sugar until light and fluffy about 3 minutes
- Add egg, vanilla and almond extract and cream for a minute
- Slowly add flour baking powder and salt and mix until incorporated
- Use small cookie scoop and scoop out dough, spacing about 1.5” apart on prepared cookie sheet
- Bake for 9 minutes or until the edges start to brown
- While the cookies are cooling make the glaze.
- Dip each cookie in the glaze and sprinkle with jimmies.
Cookies will stay fresh for five days in airtight container
