BBQ Chicken Pizza

While we were on vacation, I got the inspiration for this new recipe. After a day of hiking in the Grand Canyon, we stopped at The Grand Canyon and Brewery. As soon as I walked in there, I could smell the food. It smelled amazing. I asked our server what smelled so good, he goes pizza, we are known for our pizza. I am always a little hesitant about ordering pizza, because I am a Jersey girl and us Jersey girls are picky about our pizza. The pizza looked really good, so Jimmy and I decided to try it. We were debating between the pepperoni pizza and the BBQ chicken pizza. We decided to go with pepperoni, because we are boring people. But I knew when we got home I needed to make BBQ chicken. It has been quite a few years since we have had BBQ chicken pizza. I made this pizza and Jimmy was overly impressed. He couldn’t believe how good it was. I have to say it is probably the best homemade pizza I have ever had. The leftover pizza crust I froze for another day!!

Ingredients

  • 3 cups all purpose flour
  • 1 ¼ cup  warm water 110 degrees F
  • 1 pack of rapid instant dry yeast
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • ½ tsp garlic powder
  • Additional olive oil
  • ½ cup Sweet Baby Ray’s BBQ Sauce
  • 1 ½ cups of shredded BBQ chicken
  • 1 cup sharp  shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ red onion diced
  • Cilantro 

 

Directions

  1. In a large mixing bowl using the dough hook on low speed mix together flour, water, yeast, olive oil, honey, salt and garlic powder, and dough should form a ball. If the dough is too dry add water 1 tsp at a time. If it is to wet add flour 1 tbsp at a time. 
  2. Lightly flour a surface and knead the dough into a ball. Using a little bit of additional olive oil, grease a bowl and place the dough in the bowl. Cover with plastic wrap and place in a warm place on your counter. Let rise for an hour or so.
  3. Preheat the oven to 400, place pizza stone in the oven. While the oven is preheating, split the dough into 2 balls. Roll one of the balls out into a circle big enough for the pizza store or pan. Remove the pizza stone from the oven and place the rolled out pizza crust on the stone, place back in the oven and let cook for 10 minutes. Remove the pizza from the oven, spread the BBQ sauce on the crust. Sprinkle the mozzarella cheese on top of the BBQ sauce, next sprinkle the chicken and red onion on the pizza and top with the cheddar cheese. Baked for an additional 12-16 minutes. I know my pizza with the cheese completely melted and a little more on the done side.
  4. Sprinkle with fresh chopped cilantro, slice and serve. 
Ready in 90 minutes Makes one large pizza

 

Tips & Recommendations

I prefer to grate my own cheese. My favorite mozzarella cheese is from Trader Joes and my favorite cheddar cheese is Cracker Barrel extra sharp cheddar cheese. You can make another pizza or freeze the dough I like did. I wrapped in plastic wrap and placed in a freezer bag in the freezer.
