Blueberry Breakfast Bars

I am a huge breakfast person. It really is my favorite meal of the day. Usually I do a protein shake, but every now and then, I like to switch things. I decided to make these delicious blueberry breakfast bars. They are loaded with blueberries and oatmeal, which is healthy. They make a great on the go bar.

Sometimes mixing things with honey can be tough. I found whisking the honey with the melted butter makes it easier to mix it all together. Be careful when you make the blueberry mixture, you don’t want to over mix it and smash the blueberries.

 

Ingredients

  • ½ cup unsalted butter melted
  • 2 tsp vanilla extract
  • 1 ⅔ cup free oatmeal
  • 1 ½ cups flour
  • ⅓ cup brown sugar
  • ½ cup honey
  •  1 ½ tsp cinnamon
  • ½ tsp salt
  • Filling-3 cups blueberries, 2 tbsp lemon juice, 1 tbsp cornstarch and ½ cup brown sugar
  • ½ cup walnuts or pecans

 

Directions

  1. Preheat oven to 325.
  2. Melt/brown butter on the stove. While the butter is melting, whisk together oatmeal, flour, cinnamon and salt.  
  3. After butter is melted or brown, remove from the stove and whisk in honey. Add the butter mixture to the dry ingredients and mix until combined.
  4. Spread all but 1 cup of the mixture on the bottom of the pan. 
  5. In the same bowl or another bowl, gently fold the blueberries, lemon juice, cornstarch and brown sugar. Add blueberry mixture on top of the oatmeal mixture. Sprinkle remaining crumble on top of the blueberries. Sprinkle nuts on top if desired.
  6. Bake for 45 minutes or until done.
Ready in 60 minutes Makes 9 bars

 

Tips & Recommendations

You can frozen blueberries, if so add another 1 tbsp of cornstarch to the mixture. Nuts can be omitted, but I love the nuts in this.
