Brown Butter Blondies

I remember making these chocolate chip bars growing, but I decided to update the recipe. I love taking recipes I had growing up and updating them for my family. One thing about my childhood I remember is my mom always having homemade baked goods in our house. Sometimes it was cookies, sometimes banana bread, other times it was muffins and every so often there would be something cake like. Something about these homemade baked goods always made me feel a little extra love and showed me  was special to my mom. I want to pass this same feeling along to my kids and let them know they are so special to me.

If you know me, you know I love brown butter.  My kids love all things with brown butter. So I decided to brown the butter and it really does make these bars absolutely delicious. I also like to use a few different kinds of chocolate chips, from milk chocolate to dark chocolate. I prefer Ghirardelli chocolate chips, they are my favorite to bake with.

 

Also you don’t need a mixer, just a bowl, whisk and spatula. You can whip them up in less than an hour. So if you need something chocolate and don’t feel like making cookies, make these bars instead. This is a great recipe to make with your kids. Isabella loves to make these with me.

Ingredients

  • 1 cup brown butter
  • ⅓ cup sugar
  • 1 ½ cups brown sugar
  • 2 large eggs room temperature
  • 1 tbsp vanilla extract
  • 2 ⅓ cups all purpose flour
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 tbsp corn starch
  • 1 cup Ghirardelli milk chocolate chips
  • 1 cup Ghirardelli 60% chocolate chips

 

Directions

  1. Preheat the oven to 350, Line a 9×13 pan with parchment paper and spray with cooking spray, set aside.
  2. Brown butter over medium heat on the stove, let cool for a few minutes.
  3. Whisk in sugar and brown sugar, until combined.
  4. Whisk in room temperature eggs and vanilla extract until combined.
  5. Fold in flour, salt and baking soda, until almost combined.
  6. Fold in chocolate chips until just combined, no traces of flour left.
  7. Bake for 25 minutes or until done.
  8. Blondies will stay fresh in an airtight container for up to a week or in the freezer for 3 months.

Tips & Recommendations

Tips on browning your butter, you will start to smell a nutty aroma. Its important to make sure you stir the butter occasionally while it is browning.
