Buffalo Chicken Quesadillas

We love quesadillas in our family. If it is on the menu there is a good chance one of us will order some. My favorite kind are buffalo chicken and steak quesadillas. One of our favorite restaurants makes an amazing one steak one.

This recipe is super easy to make. You can make my Crockpot Buffalo Chicken or use leftover rotisserie chicken and toss it in buffalo sauce. I love my crockpot buffalo chicken recipe, it comes in handy so many times. And so does my bestie rotisserie chicken, I am always using that for one of my easy dinner recipes.

My hubby loves this recipe, because it is easy to make. If we have some leftover chicken, he will make it for lunch. The kids love this recipe, I used a mild buffalo sauce, so it wasn’t too spicy.

Ingredients

  • 1-1 ½ cups shredded buffalo chicken or leftover rotisserie chicken tossed in buffalo sauce 
  • 4-6  burrito flour shells
  • ⅓ cup plain greek yogurt
  • ½ cup shredded cheddar cheese
  • 1 yellow or orange pepper diced
  • Blue cheese crumbles

 

Directions

  1. Heat a large nonstick skillet with a little bit of olive oil.
  2. Spread 1 tbsp of Greek yogurt on each flour tortilla.
  3. Sprinkle cheddar cheese and blue cheese crumble on top of the Greek yogurt.
  4. Place the tortilla in the prepared skillet.
  5. Add ¼-⅓ cup buffalo shredded chicken on top of the cheese. Fold over the other half the tortilla and cook for 5 minutes before carefully flipping over the tortilla.
  6. Cook for another 3 minutes.
  7. Add more oil if necessary, repeat with the rest of the tortillas.
30-40 minutes Makes 4-6 quesadillas

 

Tips & Recommendations

If you don’t want the blue cheese, you don’t have to add it, just add more cheese. You can substitute blue cheese salad dressing, ranch salad dressing or sour cream for the Greek yogurt. I made three in one day and saved the chicken for the next day to make more.
