Christmas Crack

Today is the final day of 12 Days of Christmas Cookies. This is definitely a customer favorite and so easy to make. I make this every year for Christmas cookie boxes and everyone always tells me you just can’t eat one.
Ingredients
- 1 sleeve of saltine crackers (40ish)
- 1 cup unsalted butter
- 1 cup dark brown sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- 2-3 cups Ghirardelli chocolate chips
Directions
- Preheat oven to 350
- Spray a jelly roll pan (11×17) with Pam and line with parchment paper
- Make rows of crackers to cover the pan, you might have extra room
- In a medium pot whisk butter and brown sugar on medium heat until it starts to boil. Let it boil for 3 minutes and add vanilla and salt to it and whisk for about 30 seconds
- Pour mixture over the crackers
- Baked for 7 minutes
- Pull the tray out of the oven and immediately sprinkle chocolate chips evenly and bake for another minute
- With an offset spatula spread the chocolate chips to make sure they are spread evenly
- Sprinkle with jimmies
- Refrigerate for at least two hours before breaking into pieces and serving
Crack will stay fresh for 10 days in an airtight container or can be frozen for two months
