Cinnamon Roll Cake

Jimmy and I carried over one of his family traditions, big Christmas breakfast. His mom always makes breakfast for the family. So Jimmy wanted to do that for our family. Sometimes we have friends over for Christmas, sometimes is just the two of us with a big breakfast.

This cinnamon roll cake I have been making for years and it always a favorite for family and friends. So many people love cinnamon rolls, but they take a lot of time to make. I want to create an easy cinnamon roll recipe for you, but I just haven’t had the time or taste testers for it. Not only is this cinnamon roll cake easy to make, it is so good and not heavy as a cinnamon roll. It really is a great treat for the family. It also make a good gift for others.

Make the cinnamon filling first and just set it aside. Make sure not to over mix the cake. There might still be a few lumps in the cake when you mix it. That is okay. When you add the cinnamon filling you will swirl it and mix it a little bit more. This cake is a lighter cake, not super heavy.

Every time I make this cake, I think of mom. I know she would love it with a cup of coffee.

Ingredients

Cinnamon Filling

  • ¾ cup unsalted butter softened
  • 1 cup brown sugar
  • 2 tbsp flour
  • 1 tbsp cinnamon
  • Dash of salt

Cake

  • 3 cups all purpose flour spooned and leveled
  • ¾ cup sugar
  • ⅓ cup brown sugar
  • ½ tsp salt
  • 4 tsp baking powder
  • 1 ½ cup milk
  • 2 eggs room temperature
  • 2 tsp vanilla
  • ½ cup melted butter

Glaze

  • 2 cups powdered sugar
  • 5 tbsp water or milk
  • ½ tsp vanilla

If you want to do a maple glaze 3 tbsp of maple syrup and 1-2 tbsp of water

 

Directions

  1. Preheat oven to 350
  2. Cinnamon filling
  3. In a medium bowl whisk the flour, brown sugar, cinnamon and salt. Add soften butter you can use a hand mixer, forks or your fingers, set aside.

Cake

  1. In large bowl mix flour, sugar, brown sugar, salt and baking powder
  2. In small bowl mix milk, eggs, melted butter and vanilla.
  3. Add wet mixture into flour mixture until combined.
  4. Pour into greased 9×13 pan
  5. Drop cinnamon filling over cake mixture evenly.
  6. Swirl your topping and cake mixture with a knife going up and down the length of the pan (but only inserting it in the cake mix a little – not all the way).
  7. Bake at 350 for 28-32 minutes.
  8. Mix glaze ingredients together. Drizzle over cake

Wrap cake tightly and it will stay fresh for three days. Cake can be frozen for 2 months

Ready in 60 minutes Makes 12 equal servings 

 

Tips & Recommendations

Make sure your eggs and milk are room temperature, because you are mixing them with warm butter.
