Cookie Butter Bars

About 7 years go I was introduced to cookie butter and it changed my life. I mean if you haven’t tried it, you really to try it. It is one of my favorite things to eat, besides chocolate. Cookie butter is like a cookie in a peanut butter type form. It is so good!!! I have made so many things with it and I am always looking for new ways to use it. What is your favorite thing with cookie butter?

Ingredients

  • ½ cup butter room temperature
  • ⅔  cup brown sugar
  • 1 cup cookie butter
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 cup flour
  • ½ tsp salt
  • ½ cup cookie butter for swirling

 

Directions

  1. Preheat the oven to 350, line a 9×9 pan with parchment paper and spray with cooking spray. 
  2. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy, about 3 minutes.
  3. Add cookie butter and cream until combined for about 2 minutes. Make sure to scrape down the sides of the bowl.
  4. Add eggs and vanilla, mix until combined, make sure to scrape down the sides of the bowl.
  5. Slowly add the flour and salt, mixing until combined.
  6. Place the dough in the bottom of the prepared pan. Take the remaining ½ cup cookie butter and make dollops on top of the dough. Take a knife and swirl the cookie butter through the dough.
  7. Bake for 25-30 minutes. Mine took 27 minutes. Sprinkle with coarse salt if desired.
Ready in 40 minutes Makes 12 bars

 

Tips & Recommendations

There are two different kinds of cookie butter, both are delicious. The biscoff you can find at your local grocery store. The other is cookie butter that Trader Joes carries.
