Cookie Butter Muffins
I was content planning the other day for blogging, social media and Pinterest, which entails a lot. I have to go through recipes that I already have, work on creating new recipes, edit pictures, write out recipes and so forth. One of the recipes I created is the muffin. I wanted something different for a muffin. I just did a blueberry muffin, which if you have not tried it, you need to. I wanted a muffin that was comforting, that was great for breakfast or even a snack. This vanilla muffin with cookie butter is absolutely delicious!!!

Ingredients
- 1 ⅓ cup all purpose flour
- ¼ cup sugar
- ¼ cup brown sugar
- ¾ tsp baking soda
- ½ tsp salt
- ⅔ cup vanilla Greek yogurt
- ¼ cup canola oil
- 1 large egg room temperature
- 1tbsp vanilla extract
- ½ cup cookie butter
- Topping-¾ cup sugar, 1 tbsp cinnamon and 6 tbsp melted butter brown
Directions
- Preheat oven to 350
- In a large bowl whisk together the flour, sugar, brown sugar, baking soda and salt, set aside.
- In a separate bowl whisk together the greek yogurt, oil, egg and vanilla.
- Add the wet ingredients to the dry ingredients, mix until just combined
- Spray 9 of the muffin tin with Pam.
- Using a small cookie scoop, scoop batter into 9 of the muffin, place about a tbsp spoon of cookie butter on each one, followed by another scoop of batter
- Bake on 425 for 5 minutes, turn the temperature down to 350 and bake for 9-10 minutes.
- While the muffins are baking make the cinnamon sugar, add the cinnamon to sugar.
- While the muffins are cooling, melt the butter until slightly brown.
- Dip each muffin into the butter, then cinnamon sugar.
- Eat and Enjoy!!!
Tips & Recommendations
You don’t have to brown the butter, but I highly recommend it. You can swap canola oil for another oil. You can swap out sour cream for the Greek yogurt.
