Fig Newton Bars

One of my favorite cookies from my childhood is Fig Newtons. I am not sure why, maybe because they are not super sweet. I do really like the texture of them. I was asked by Just Jans to sample some of their products. I was really excited about the Fig jam, because I knew exactly what I wanted to make with them and that was Fig Newtons. I decided to make them into bars, because it would be so much easier to do with the same flavor and texture.

Ingredients
- ½ cup unsalted butter room temperature
- 1 cup brown sugar
- 1 large egg room temperature
- 2 tsp vanilla extract
- ¾ cup all purpose flour
- ¾ cup almond flour
- ½ tsp salt
- 1 jar of Just Jan’s fig spread https://www.justjans.com/
Directions
- Preheat the oven to 350. Line a 9×9 pan with parchment paper and spray with cooking spray. Set the pan aside.
- In a large mixing bowl, cream together butter and brown sugar, until light and fluffy, about 3 minutes.
- Add the egg and vanilla extract, cream until combined, making sure to scrape down the sides of the bowl.
- Slowly add the flour, almond flour and salt, mix until just combined. Mixture will be crumbly.
- In the prepared pan, spread a layer of the dough about ⅔ and ¾ of dough. Spread the fig jam on the layer of dough. Crumble the remaining dough on top of the fig jam. Bake for 18-22 minutes or until done.
