Fig Newton Bars

One of my favorite cookies from my childhood is Fig Newtons. I am not sure why, maybe because they are not super sweet. I do really like the texture of them. I was asked by Just Jans to sample some of their products. I was really excited about the Fig jam, because I knew exactly what I wanted to make with them and that was Fig Newtons. I decided to make them into bars, because it would be so much easier to do with the same flavor and texture.

Ingredients

  • ½ cup unsalted butter room temperature
  • 1 cup brown sugar
  • 1 large egg room temperature
  • 2 tsp vanilla extract
  • ¾  cup all purpose flour
  • ¾  cup almond flour
  • ½ tsp salt
  • 1 jar of Just Jan’s fig spread https://www.justjans.com/

 

Directions

 

  1. Preheat the oven to 350. Line a 9×9 pan with parchment paper and spray with cooking spray. Set the pan aside.
  2. In a large mixing bowl, cream together butter and brown sugar, until light and fluffy, about 3 minutes.
  3. Add the egg and vanilla extract, cream until combined, making sure to scrape down the sides of the bowl.
  4. Slowly add the flour, almond flour and salt, mix until just combined. Mixture will be crumbly.
  5. In the prepared pan, spread a layer of the dough about ⅔ and ¾ of dough. Spread the fig jam on the layer of dough. Crumble the remaining dough on top of the fig jam. Bake for 18-22 minutes or until done.
Ready in 30 minutes Makes a 9x9 pan
