Funfetti Ice Cream Sandwiches

We love ice cream and cookies in our house, so why not combine them into an ice cream sandwich? Isabella and I love jimmies/sprinkles so we are always trying to make something with sprinkles or adding them on to something. So these ice cream sandwiches were made because of our love for sprinkles.

First we start by making my super easy sugar cookies. After the cookies are baked, I throw them in the freezer. Well I don’t actually throw them in the freezer, I carefully place in the freezer so they don’t break. That’s why I love this recipe, it can be made in stages. Like make the cookies one day, add the ice cream another day and serve another day. We really did that. We made the cookies after school one day and a few days later, we made the sandwiches. I did the scooping of the ice cream. Isabella did the mess making, I mean rolling them in sprinkles. Somehow that girl had sprinkles everywhere and I really mean everywhere in the kitchen. The important thing was we had so much fun making these.

She picked out Neapolitan ice cream for the middle, she wanted different flavors. But you can pick what flavors you want, like plain vanilla or even strawberry, just something that pairs with these sugar cookies.

These are perfect to make for a BBQ, family picnic or whatever. You can make them ahead of time and freeze them until ready to serve.

Ingredients

  • Sugar Cookie Recipe
  • ¼ gallon Neapolitan Ice Cream or flavor of your choice
  • ⅔ cup Watkins Dye Free Sprinkles

 

Directions

  1. Make sugar cookies per instructions.  
  2. Freeze baked cookies for 2 hours. 
  3. Place sprinkles in a small bowl.
  4. Take 24 cookies out of the freezer and place on parchment paper. Pair cookies with similar size and shape.
  5. Using ⅓ ice cream scoop, scoop ice cream onto 1 cookie of a pair. Gently place the other cookie on top and very carefully smush it down. Fill in the sides of the cookie sandwich with ice cream if needed. Cookie sandwiches should be about 1” thick.
  6. Roll each cookie in the sprinkles.
  7.  Place cookie sandwiches on a dish or in a container. Once all cookies are done, place back into the freezer for 1 hour before serving.
  8. Serve and enjoy.
Ready in 4 hours, includes freezer time
