Lobster Orzo
When we were in Vegas for vacation, I had such an amazing meal. The lobster risotto was just out of this world. It was seriously one of the best meals I have ever had. It was so flavorful and lobster was in just about ever bite. When I was deciding what meals I wanted to recreate from our vacation, this dinner was one I wanted to do. I wanted to do an easier and a little bit healthier version of it.
The reason I wanted to go with an easier version is because I need quick dinners. Everyday after school we have activities and with warmer weather we are outside more and I don’t want to be tied the kitchen every night. I want to be making memories with my kids. Instead of risotto, I went with orzo. Orzo doesn’t take much time to cook. The risotto I had was in a creamy sauce, I went with a lighter sauce. The sauce is a white wine sauce with a little bit of grated parmesan cheese. My meal also only takes about 30 minutes to make, which is always a winner with me.
One day I will make lobster risotto and I promise I will share that recipe with you.

Ingredients
- 16 oz of lobster (I used lobster tails)
- 1 oz olive oil
- 1 small shallot
- 2-3 garlic cloves minced
- 1 cup white wine
- 2-3 cups of chicken or vegetable stock
- 1 ½ cups orzo
- Salt and pepper to taste
- ¼ cup parmesan cheese or more to taste
Directions
- Boil lobster and set aside. When the lobster is cool, cut it into small pieces.
- In a separate skillet, heat olive oil. Add diced shallot and minced garlic to the skillet.
- Add in white wine and stock, stir together.
- Add in orzo and stir.
- Add in lobster and mix together.
- Season with salt and pepper.
- Once orzo is almost cooked, add in parmesan cheese. Orzo takes about 8 minutes total to cook.
- Enjoy.
