Old Bay Baked Potato Chips

I attended my friends online Pampered Chef party and of course I ordered a bunch of things. One of things I was really excited about was the new mandolin slicer they have. I thought this would be great for different ways to make veggies for the kids.

First thing I tried was potato chips. Jimmy loves his air fryer, me on the other hand hate the air fryer. So he cooked his in the air fryer and I cooked mine in the oven. Guess which ones we like better? the ones baked in the oven. We felt like they cooked better and crisped up better. But feel free to try them in the air fryer. I am sure we will try them again in the air fryer.

The biggest thing is soaking the chips in ice cold water. This helps with getting the starch off the potatoes and helps to crisp them in the oven. It is important to make sure you dry the potatoes.

We loved these chips and the kids can’t wait to make them with us. Homemade potato chips is on their list of things to make on their next visit with us.

Ingredients

  • 2 large Yukon gold potatoes (3 medium or 4 small)
  • 2-3 tbsp of olive oil 
  • 2 tsp Old Bay Seasoning 
  • 1 tsp salt
  • ½ tsp pepper

 

Directions

  1. Using a mandolin slicer or a knife, slice potatoes to ⅛”
  2. Soak the potatoes in ice cold water for 30 minutes. 
  3. Preheat the oven to 400 and line two baking sheets with parchment paper, set aside.
  4. Drain the water from the potatoes and rinse them off. Lay out potatoes in a single layer on paper towels to dry. Making sure to pat them to make sure they dry. While the potatoes are drying, wash and dry the bowl. 
  5. In the bowl, add the potatoes 2 tbsp olive oil, old bay seasoning, salt and pepper. Mix together, making sure each potato is coating with oil and seasoning. Add the additional tbsp of oil if needed.
  6. Lay the potatoes on prepared baking sheets, making sure not to overlap them. Bake for 12 minutes. Pull one tray out of the oven and flip the chips. Put back in the oven and repeat with the other tray. Bake for another 10 minutes. Check for doneness, any that are starting to brown, pull off the tray and place on paper towels or parchment paper. They will crisp up a little bit more. Return the tray to the oven and cook the remaining chips for another 1-2 minutes. Keep doing this until all chips are done. Mine took about a total of 30 minutes.
  7. Allow to cool, before serving.
  8. Chips will stay fresh for 5 days in an airtight container.
Ready in 75 minutes Serves about 4 people

 

Tips & Recommendations

You might need to bake a third tray of chips, depending on how many you have. Only cook 2 trays at a time. You can always add more seasoning after they are baked. You can also lay the dry potatoes on the prepared baking sheet, brush each one with oil and mix the seasoning and sprinkle on one side. Flip each potato over and repeat with brushing with oil and sprinkling with seasoning
