Pancetta Pasta with Peas

Lately I am all about easy meals. I mean I have to be. Three kids are keeping me busy. I have been making lots of crockpot meal and sheetpan meals. Well this meal is a super easy meal to make and takes less than 30 minutes to make, which is always a win for me. Sometimes when I try a new meal, I am not sure how the kids will like. I really was expecting the kids to complain about the peas, but they gobbled this meal up. I was really hoping for leftovers, but that didn’t happen. I was thinking I would have leftovers for the kids lunches, but I didn’t. I barely had enough for Isabella’s lunch, but oh well!! The kids loved it and that is what is important.

My favorite things about this meal is that it is so simple to make. It is loaded with flavor and absolutely delicious. This recipe can be a great main dish or use as a side with chicken or steak.

Ingredients

  • 14oz box of pasta
  • ¼ cup unsalted butter
  • 8 oz diced pancetta
  • 1 cup of peas
  • 1 tsp garlic
  • 1 tsp pepper
  • 1 cup fresh grated parmesan 

 

Directions

  1. Boil water with salt and cook pasta to the package directions minus one minute. Add the peas when there is 1 minute left of cook time.
  2. While the pasta is cooking, in a large skillet add the butter. Once the butter is melted. Add the diced pancetta, garlic and pepper. Cook until completed.
  3. Add the cooked pasta and peas to the pancetta pan. Mix together
  4. Add one ladle of the pasta water to the pancetta and pasta, mix together.
  5. Add the freshly grated parmesan cheese and mix together.
  6. Enjoy and serve. Add more freshly grated parmesan if desired.
Ready in 30 minutes Serves 6-8 people

 

Tips & Recommendations

I use a protein pasta to add extra protein. If using frozen peas, add to pasta three minutes before the pasta is done.
