Peanut Butter Protein Bars

Awhile ago I made peanut butter protein bars and they were a hit. Well we were traveling a few weeks ago and I always pack snacks. So hubs wanted something peanut butter, so I decided to make these peanut butter protein bars. And honestly we just love them. They were a perfect snack for us before we went on a long walk. They also made a great snack to eat on the airplane.

These bars are so easy to make and don’t require baking. You just need a pot to melt the honey, peanut butter and butter. A bowl to mix everything together. I washed the pot and used it again to melt the chocolate and peanut butter. These bars don’t even take 15 minutes to bake. You can either stick them in the fridge or freezer.

Ingredients

  • ¾ cup peanut butter
  • ½ cup honey
  • 2 tbsp unsalted butter
  • 2 cups gluten free oatmeal
  • ½ cup Arbonne vanilla protein powder
  • Dash of salt 
  • 1 cup 60% Cacao Ghirardelli chocolate chips
  • ¼ cup peanut butter

 

Directions

  1. Line a 9×9 pan with parchment paper, set aside. 
  2. In a medium saucepan, melt peanut butter, honey and butter on low to medium heat. Make sure to whisk constantly to keep from burning.
  3. In a separate medium size bowl, whisk together oatmeal, protein powder and salt.
  4. Mix the peanut butter mixture and oatmeal mixture together. 
  5. Spread oatmeal mixture into the bottom of the prepared pan.
  6. Using the same pot, melt together the chocolate chips and peanut butter
  7. Spread chocolate mixture evenly over the oatmeal mixture. Place in the fridge for 2 hours before cutting or freezer for 30 minutes.
Ready in 12 minutes Makes a 9x9 tray

 

Tips & Recommendations

Make sure to constantly whisk the peanut butter mixture while melting, along with chocolate chip mixture. This will help from burning.
