Pina-Colada-Smoothie

Nothing beats a nice refreshing drink on a hot summer day. My kids love getting a virgin Pina Colada at the pool. So this homemade Pina Colada is so light and refreshing and the kids love it. I loved it too, it reminded me I need to make my lighter version of a Pina Colada that I had on vacation.

This is a great recipe to make with your kids. JJ is my smoothie making buddy. He is always asking to help make our morning protein shakes. He just loves smoothies and protein shakes. We try to make them regularly for him. If I can sneak some protein in him, I will. Even though this doesn’t have protein he still loves it. This creation was actually his idea. I gave him a few different ideas and he picked this one.

We start with frozen pineapple and a little bit of ice for the thickness. We did coconut milk and coconut Greek yogurt to give it more of the pina colada taste and threw in a banana. Plus add a little bit of honey for sweetness, it makes a huge difference.

Ingredients

  • 1 cup of ice
  • Small container of coconut Greek Yogurt (5.3 oz)
  • 1 large banana
  • 2 cups frozen pineapple
  • ¾ cup coconut milk or milk of your choice
  • 1-2 tbsp honey

 

Directions

  1. In a blender add 1 cup of ice, Greek yogurt, banana, frozen pineapple, milk and honey. 
  2. Blend on smoothie settings. Pour into the cup and serve. Garnish with a piece of pineapple, cherry and or straw.
Ready in 5 minutes Serves 2 people
