Pumpkin Pancakes

Breakfast is my favorite meal of the day. I really think this comes from my childhood. My mom always made breakfast for us. Sometimes it was cereal, pancakes, waffles, french toast or oatmeal. I always loved that time with family. When I was older and the only one at home, it was great to spend that time with my parents.

As we continue the pumpkin theme this week. Here is my pumpkin pancakes recipe. Hubs and the kids loves these. I make them quite often during the Fall and Winter months for the family. They also make a great lunch for the kiddos too.

 

 

I know you might be scared to attempt homemade pancakes, but don’t be. I have worked on this recipe for years. I have made them many times without the failing. I have learned a few tricks that I am gonna share with you. First room temperature milk and eggs help the pancakes to rise. Second let the mixture sit for a few minutes, this helps all the ingredients to activate. Third cooking the pancakes just below medium, like thinking time it would be 630/700. This helps the pancakes to cook through and not get super brown on the outside.

Don’t forget to cook some bacon to go with the pancakes.

Ingredients

  • 1 cup all purpose flour
  • 3 tbsp brown sugar
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt
  • ⅔ cup milk (room temperature preferred)
  • ⅔ cup pumpkin puree
  • 1 large egg (room temperature preferred)
  • 1 tsp vanilla extract
  • 2 tbsp melted butter cooled

 

Directions

  1. In a large bowl whisk together flour, brown sugar, sugar, baking powder, baking soda, cinnamon, pumpkin pie spice and salt, set aside.
  2. In another bowl whisk together milk, pumpkin puree, egg and vanilla together. Add melted butter and whisk together until combined.
  3. Add wet ingredients to dry ingredients, mix until just combined. Set aside
  4. Heat skillet/griddle on low/medium heat. Add some butter. Once butter is melted, use a scoop to scoop batter onto the griddle. Once you start to see bubbles flip pancakes over and cook for another 2 minutes.
  5. Serve with butter and maple syrup
Ready in 20 minutes Serves 4 people

 

Tips & Recommendations

Make sure to use pumpkin puree, not pumpkin pie filling.
