Pumpkin Protein Balls

I took a poll to see what you wanted for another pumpkin recipe. You voted for protein balls. I love these little bites of deliciousness. They are perfect for when I need a burst of energy. Like after my morning workout before out family walk. Or in the afternoon before a walk.

I like to start by whisking the dry ingredients together, but you can throw everything in the bowl and whisk together. I like maple syrup with them, but you can use honey if you wish. I personally think maple tastes better.

Ingredients

  • 2 cups gluten free oatmeal
  • ¼ cup Arbonne vanilla protein powder
  • 1 tbsp flax seeds
  • 1 tsp pumpkin pie spice
  • ½ cup pumpkin puree
  • ½ cup almond butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ¼ cacao nibs or mini chocolate chips

 

Directions

  1. In a bowl whisk together oatmeal, protein powder, flax seeds and pumpkin spice.
  2. Add pumpkin, almond butter, syrup and vanilla extract, mix togethers.
  3. Add cacao nibs or mini chocolate chips, mix together,
  4. Roll into balls and place on a cookie sheet lined with parchment paper.
  5. Place a tray of protein balls in the refrigerator for 20 minutes.
  6. Protein balls will stay fresh for 1 week in an airtight container in the refrigerator or in freezer for 3 months,
Ready in 30 minutes includes refrigerator time Makes about 20 protein balls

 

Tips & Recommendations

You can substitute the maple syrup for honey. You can substitute another nut butter for the almond butter. I prefer gluten free oats, just don’t you use quick oats.
