Pumpkin Ravioli
I am not a huge pumpkin person, but there are a few things that I love pumpkin. Pumpkin Ravioli would be one of those things. Besides it being absolutely amazing, it has 10 ingredients and takes about 15 minutes to make. Can we say WIN!! It is a great dinner to make for those busy nights. I know I love an easy meal for a busy day.
I get my Ravioli from Gold Star Pasta, they are at our local Farmer’s Market. I love supporting local businesses. I know Trader Joe’s carries it and some grocery stores do too. Make sure not to cook the pasta all the way, it will finish cooking in the sauce. I usually take mine out about 2 minutes before the cook time on the package says.

Ingredients
- 1 packaged pumpkin ravioli
- ¼ cup unsalted butter
- 1 tbsp brown sugar
- ⅓ cup chopped pecans
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- ¼ cup pecans
- salt and pepper to taste
- Fresh rosemary
- Parmesan cheese optional
Directions
- Bring a large pot of salted water to a boil.
- In a large skillet over medium lightly brown butter.
- Start to cook your ravioli, don’t cook it all the way through. (I pull mine out of the water about 2 minutes before it is already cooked.
- Add brown sugar and chopped pecans, stir and cook for 2 minutes.
- Reduce heat to low/medium, add balsamic vinegar and olive oil, stir frequently until the sauce starts to thicken about 5 minutes.
- Add pumpkin ravioli to sauce and stir for 1-2 minutes. It depends if your ravioli is done.
- Add fresh chopped rosemary
- Serve with parmesan cheese if desired.
Tips & Recommendations
I like to get my water for the ravioli almost to a boil before I start to brown the butter. You want to make sure that you take it out 2 minutes before the cook time on the packaged directions says. You can get pumpkin ravioli from Trader Joes, some local grocery stores carry it. I get mine from a local vendor at our Farmer’s Market.
