Ravioli with Brown Butter Sage Sauce

By now you know my obsession with brown butter and I decided to do some cooking with it.

 

Ingredients

  • Ravioli of your choice (I used crab and lobster)
  • 5 tbsp olive oil butter or butter
  • Garlic from one clove
  • ¼-½ tsp of salt depends if your butter is salted
  • Pepper to taste
  • Red pepper to taste
  • Juice from ½-1 lemon
  • ¼ cup bread crumbs
  • Juice from half a lemon
  • ¼ cup parmesan cheese
  • 8 sage leaves roughly chopped
  • 2 ladles of water from ravioli water

 

Directions

  1. In a medium pot boil water and add 12 medium ravioli, you want to cook it less then 2 minutes from the cook time, it will finish cooking in the sauce
  2. While the ravioli is cooking, make your sauce
  3. In a large cast iron skillet, start to brown your butter
  4. Add garlic, salt, pepper and red pepper, constantly stirring.
  5. Add lemon juice and stir
  6. Add breadcrumbs and stir, it will get thick
  7. Add 2 ladles of the ravioli water to the sauce and stir.
  8. Add most of the cheese and sage, , save some for the top
  9. Add the almost cooked ravioli and carefully stir
  10. Dish into bowls and sprinkle with remaining cheese and sage
