Ravioli with Brown Butter Sage Sauce

By now you know my obsession with brown butter and I decided to do some cooking with it.
Ingredients
- Ravioli of your choice (I used crab and lobster)
- 5 tbsp olive oil butter or butter
- Garlic from one clove
- ¼-½ tsp of salt depends if your butter is salted
- Pepper to taste
- Red pepper to taste
- Juice from ½-1 lemon
- ¼ cup bread crumbs
- Juice from half a lemon
- ¼ cup parmesan cheese
- 8 sage leaves roughly chopped
- 2 ladles of water from ravioli water
Directions
- In a medium pot boil water and add 12 medium ravioli, you want to cook it less then 2 minutes from the cook time, it will finish cooking in the sauce
- While the ravioli is cooking, make your sauce
- In a large cast iron skillet, start to brown your butter
- Add garlic, salt, pepper and red pepper, constantly stirring.
- Add lemon juice and stir
- Add breadcrumbs and stir, it will get thick
- Add 2 ladles of the ravioli water to the sauce and stir.
- Add most of the cheese and sage, , save some for the top
- Add the almost cooked ravioli and carefully stir
- Dish into bowls and sprinkle with remaining cheese and sage
