Roasted Garlic Potatoes

I don’t know about you, but I am definitely picky about potatoes. Like I don’t really like mashed potatoes. And don’t even get me started about french fries, I am very picky about them. However bite size potatoes are one of my favorite side dishes to make. I love the flavors of garlic, rosemary and parmesan together, adding them to potatoes makes the perfect side dish for a meal.

Ingredients
- 1 1/2 lbs of baby potatoes
- 3 tbsp olive oil
- 2 tsp minced garlic
- 1 tsp salt
- ¾ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
- 1 tsp fresh rosemary
- ⅓ cup grated parmesan cheese
Directions
- Cut potatoes in bite size pieces. Soak potatoes in cold water for 20-30 minutes.
- Preheat the oven to 400, line the pan with foil or parchment paper.
- Drain the potatoes, set aside.
- In a bowl whisk together the olive oil, minced garlic, salt, black pepper, Italian seasoning and paprika. Pour mixture over the potatoes and mix together.
- Place potatoes on the prepared baking pan.
- Bake for 40. Pull the tray out of the oven and flip the potatoes. Bake for another 20-25 minutes or until done.
- Sprinkle with fresh rosemary and parmesan cheese, place back in the oven for a few minutes, until the cheese is melted.
- Serve and Enjoy
