Sheet Pan BBQ Salmon and Sweet Potatoes
There are days when I don’t have a lot of time and I need an easy meal to make. Sheet pan meals are usually my go to for a quick, easy and delicious meal. Since salmon is one of my favorite meals to eat, I wanted to create a sheet pan meal with salmon. This BBQ salmon is absolutely delicious and it is also Jimmy’s favorite way I make it. He isn’t a huge sweet potato person, but diced up with BBQ sauce he loved them.
When they cook on the sheet pan, they get a little crispiness to them. I cooked my salmon and potatoes on my stoneware bar pan or a sheet pan lined with tin foil. Just make sure to line the sheet pan with foil. It makes for an easy clean up.
I hope you enjoy this easy bbq salmon sheet pan dinner as much as we do. I have cooked this with a big salmon filet that we sliced to serve. I also have bought salmon slices and cooked it that way too. Both are delicious.

Ingredients
- 1 -1 ½ pound of salmon
- 3-4 medium size sweet potatoes diced
- 2-3 tbsp olive oil
- 2 tsp dry rub BBQ seasoning
- Salt and pepper to taste
- ⅔ cup Rufus BBQ sauce
Directions
- Preheat the oven to 400..
- Clean and dice sweet potatoes, place on a sheet pan.
- Sprinkle olive oil on potatoes. Add dry rub, salt and pepper, mix together,
- Place salmon in the middle of the pan. Sprinkle BBQ dry rub, salt and pepper on salmon.
- Pour BBQ sauce on salmon and potatoes, bake for 25-30minutes or until done.
- Sprinkle with fresh cilantro and serve.
Tips & Recommendations
Cook time on salmon may vary depending on thickness of salmon. The salmon I get is usually thicker, so mine usually takes a little longer. Make sure sweet potatoes are diced about ½”-¾” this will help them be the same time as the salmon.
