S’Mores Cupcake Bites

One of our favorite desserts we have made this summer are these Easy S’Mores Cupcakes. My kids are obsessed with them. They can’t stop eating them. They think they are one of the best desserts ever. I think these are JJ’s favorite dessert I’ve ever made. They are already are asking me to make them again.

These are a great dessert for a picnic or BBQ, especially for July 4th. Everyone will love them, kids and adults included. You can make these a day or two in advanced and they will stay fresh. Trust me this will be a a huge hit, especially if you are the one bringing them.

I love how easy they are to make. I start with a graham crack crust mixed with a little brown sugar and butter. After I bake them, I place a chocolate square in the crust and add a large marshmallow on top. Bake for another few minutes. After they cool and I remove them from the pan, I dip them in melted chocolate.

Go ahead and make these!! You are gonna love them. Take that bite out of them.

Ingredients

  • 12 whole graham crackers crushed 
  • ¼ cup brown sugar
  • 6 tbsp butter melted
  • 2 whole Hershey Bars divided into squares
  • 12 large marshmallows
  • 1 whole Hershey bar divided into rectangles

 

Directions

  1. Preheat the oven to 350. Spray a 12 cupcake pan with baking spray. Make sure to wipe any excess spray off the top. Set the pan aside.
  2. Pulse graham crackers until you get crumbs.
  3. In a medium bowl whisk together graham cracker crumbs and brown sugar.
  4. Whisk in the melted butter. Press mixture into the bottom of the prepared cupcake pan.
  5. Bake for 5-7 minutes until golden brown.
  6. Remove the pan from the oven. Place a chocolate square into each graham cracker crust.
  7. Place 1 marshmallow on top of the chocolate square. 
  8. Bake for 3-4 minutes until, marshmallow becomes slightly soft.
  9. Cool for 15 minutes before removing from the pan.
  10. Melt the remaining chocolate in the microwave for 90 seconds. Make sure to stir every 20 seconds. 
  11. Dip each marshmallow into the melted chocolate. Let stand until the chocolate sets.
Ready in 40 minutes Makes 1 dozen

 

Tips & Recommendations

I use three full Hershey bars. I break squares from all three bars and leave the single row to melt. You can skip the chocolate dipping if you want, but I wouldn’t recommend it.
