Steak Tacos

A few weeks ago Jimmy asked me to make some steak tacos. See we love steak tacos, it is usually our go to at Chipotle. However the last few times we have gotten steak tacos from there, well let’s just say they are nothing to write home about. So I was determined to make the best steak tacos for him. Let’s just say according to him I did.

I made these twice. The first time I marinated the meat for 3 hours and they were delicious. Jimmy was like man are these good. I was like wait until you try them when they have marinated for over 24 hours. Let’s just say they were a homerun. People at his work were like what are you eating that looks so good. He was like the best steak tacos and I am not sharing. I highly recommend marinating them for 24 hours, but anything less than that, they will still be amazing.

Ingredients

  • 2 lbs flank steak
  • Zest from 2 oranges
  • Zest from 2 limes
  • ⅓ cup orange juice (fresh is preferred)
  • ⅓ cup lime juice (fresh is preferred)
  • Handful of cilantro chopped
  • 2 tbsp sugar
  • 1 large tbsp of minced garlic
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp chili lime powder
  • 2 tsp salt
  • 1 ½ tsp ground pepper

 

Directions

  1. In a bowl add all the ingredients and whisk together, except for the flank steak.
  2. In a large freezer bag or bowl with a cover add the steak. Pour marinade over the steak and let sit for at least 3 hours, 24 hours is better. 
  3. Remove the steak from the refrigerator and let sit for 15 minutes, while you preheat your grill.
  4. Grill steak on each side for 7-10 minutes. (depending how thick your cut of meat is)
  5. When the steak is done let it rest for 10 minutes, before thinly slicing your steak. Make sure to slice the steak against the grain.
  6. Serve with fresh cilantro, lime and cheese.
Ready in 45 minutes DOES NOT include refrigerator time Makes about 12 tacos

 

Tips & Recommendations

The cook time will depend on how cooked and thick your steak is. You can use an indoor grill if you prefer. Cook time may vary.
