Strawberry Chocolate Chip Cookies

Strawberry season is here and these cookies are one of my favorite recipes. A little bit of fresh strawberries mixed with chocolate chips makes for the perfect cookie. It is almost like eating a chocolate covered strawberry, but in a cookie form. It is super easy to make and doesn’t require any refrigeration time. However a hand or stand mixer is needed. Fresh, not frozen strawberries are a must and mini chocolate chips are preferred.

Everyone that has tried these cookies, loves them. I always work on balance in my life. And these cookies represent balance to me, a little bit of chocolate and strawberries.

Ingredients

  • 1 cup unsalted butter room temperature
  • 1 ⅓ cup sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 2 ¾ cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾-1 cup fresh diced strawberries
  • ¾ cup Ghirardelli mini semi sweet chocolate chips

 

Directions

  1. In a large bowl whisk together the flour, baking powder, baking soda and salt, set aside.
  2. In a large mixing bowl, cream together butter and sugar on medium speed until light and fluffy, about 3-4 minutes. 
  3. Add eggs and vanilla, making sure to scrape down the sides of the bowl. Mix until well combined.
  4. Slowly add the flour mixture, mix until combined. 
  5. Add the chocolate chips and strawberries until just combined, maybe 30 seconds.
  6. Using a 1 tbsp scoop, scoop cookies about 2” apart on the cookie sheet. Bake for 12-14  minutes or until done.
  7. Cool for 5 minutes before removing and place on cooling rack.
  8. Cookies will stay fresh for five days in an airtight container or freezer for two months. Cookies can be scooped and frozen for three months,
Ready in 60 minutes Makes about 3-4 dozen cookies

 

Tips & Recommendations

You have to use fresh strawberries with this recipe, frozen will add too much liquid. Make sure you dice the strawberries into small pieces. Mini chocolate chips work the best, but you can use regular size chocolate chips.
